Honey Nut Cookies (Grain Free)

I try to eat fairly healthy, but I don't subscribe to any specific diet. I'm not vegan or Paleo. I eat wheat and drink alcohol. I like to eat foods that make me happy. That being said, I'm also not opposed to trying a new recipe, be it vegan or Paleo or whatever, so long as it's delicious.

Here is a grain free cookie recipe that I found and then modified to my liking...

Ingredients
1 egg
1.5 tsp vanilla extract
2 Tbls extra virgin coconut oil
Pinch salt
2.5 Tbls sugar (I used Sugar in the Raw)
1 cup almond flour
1/4 tsp baking soda

Directions
Heat the oven to 350°F (177°C).
In a medium bowl, cream together coconut oil and sugar. Add egg, vanilla and salt and mix until combined.
Stir in the almond flour and baking soda.
Using your hands, roll the dough into small balls (I was able to make 16 cookies from this recipe)
Place the balls on the baking sheet one inch apart. They need the space because they will expand during baking.
Make an indentation in each cookie with your thumb, leaving a little well. The dough is sticky, so it helps to dampen your hands with a little water.
Place a drop of honey in the well and top with an almond or almond slivers.
Bake for 10 minutes.

Note: I am NOT a nutritionist, but I figure these cookies should have about 45 calories each if you get 16 cookies from the recipe.
