(I really need to step up my photography game. This picture does not do these cookies justice)
For cookies:
Preheat oven to 350 F
1 cup natural Peanut Butter
1 cup Sugar (I used Raw Turbinado style and it gave the cookies an extra crunch)
1 egg
Mix ingredients together with a spoon. Scoop up spoonfuls of dough and roll into balls. Place dough balls on cookie sheet and flatten out into disc shape with fingers. Dough is sticky, so it helps to dampen your fingers with a little water. Cookies do not spread out much while baking. Place in preheated oven and bake for 15 minutes. (Cookies will still be soft when removed from the oven.) Place on wire rack to cool.
I made 16 cookies from this recipe and baked 8 at a time on a cookie sheet. The ones pictured above are approx 3" in diameter.
For Filling:
8 oz Cream Cheese
1/4 cup Honey
Juice of one small lemon
With electric beater, cream together cheese, honey and lemon juice until fluffy. Once Cookies are baked and cooled, spread mixture onto back of one cookie and top with another, forming a sandwich.
Refrigerate for a few minutes. Try not to eat them all in one night :)
