Recipe Redux: Falafel made from leftover Hummus

I made 3 batches of homemade hummus for a BBQ this past weekend. Needless to say, I had quite a bit leftover. Don't get me wrong, I love hummus. But I can only eat so much of the stuff. I figured there had to be a way to re-purpose the leftovers without too much fuss.

FALAFEL!!



If you've never had it, Falafel is a Mediterranean street food made up (usually) of ground chickpeas and spices and then breaded and fried like a fritter. Often accompanied by a yogurt or sesame sauce, you can eat it wrapped in a pita like a gyro or just by itself. 

I chose to serve mine over a little Tahini (a prepared sesame puree) with cucumber mint salad and spicy roasted cauliflower in the side

Recipe
1.5 c Hummus (either store bought or home-made)
1 egg
parsley
bread crumbs
olive oil

Mix together the hummus, egg and parsley (I used about a tablespoon of parsley.)
Add the bread crumbs a little at a time just until the mixture comes together. It'll thicken a little as it sets. The dough should be pastey but should roll easily without breaking apart or sticking to your hands.

Heat the olive oil in a shallow skillet over medium heat.

Sprinkle more bread crumbs onto a plate

Once the oil is heated, scoop out a portion of the hummus mixture (a heaping tablespoon should do)
Roll the mixture into a ball in your hands and then roll in the bread crumbs, flattening it into a disk shape.
Repeat with the remaining hummus mixture
Fry the patty in the olive oil for a few minutes on each side, just until a dark golden brown.
Remove from oil and drain on paper towels
