This bread recipe is super easy, and can be made in about 20 minutes (give or take oven pre-heat time). It's grain free, dairy free and it has a great texture and flavor. It's high in protein and fiber and low in carbohydrates.
You can make it as a single loaf (like focaccia) or divide it up as pictured for sandwiches...
Ingredients:
Dry:
1/4 cup Flax Meal
1/4 cup Coconut Flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp citric acid
Wet:
1/4 cup Coconut Milk (I used full fat from the can)
4 eggs
1 tsp Honey (or other sweetener)
Directions:
Preheat oven to 375F
In medium sized bowl, mix together dry ingredients. In a separate bowl, mix together wet ingredients.
Pour wet ingredients into dry ingredients and stir to combine. Mixture will be very runny. That's ok.
Let it stand for a minute or two. The coconut flour will absorb the extra liquid and the batter will thicken.
Scoop the mixture onto a parchment lined baking sheet and form into desired shape. Try to keep it about 3/4 of an inch thick all the way across. Bake at 375F for 12-15 minutes.
Let cool before eating for the best texture.
