This recipe was quick and easy, inexpensive and super healthy.
Ingredients:
2 zucchini, cut in half lengthwise and seeds removed
1 c quinoa (cooked per package instructions)
1 c lentils (cooked per package instructions)
1/2 c walnuts, chopped
2 tablespoons grated Parmesan cheese (optional)
1 tablespoon minced garlic
1 tablespoon olive oil
2 tsp parsley
1 tsp salt
Preheat oven to 400 F
Cut zucchini in half lengthwise and remove seeds. Place cut side up in baking dish.
Combine remaining ingredients and spoon evenly into the zucchini.
Cover dish with foil and bake for 30 minutes
Remove foil and bake for another 8-10 minutes.
